I treat my blog like a journal. Here you will read about what touches my heart, breaks my heart & fills my heart. I enjoy sharing the woes & treasures that come from being a wife, a stay-at-home mommy, a homeschool teacher, a blogger, & most importantly a child of God. Here you will learn about my daily life as well as the lives of my family. In this blog I desire to share with you how God is working in and through our lives. It's also here that I take time to talk to God through prayer. When reading my blog you will discover all the things that are very much a part of me... My relationship with Jesus, my growing marriage with my husband, my love for my 3 beautiful children and the calling I've received from God to teach them, & the will I have to live my life for God as the strong christian woman He has designed me to be.

Applesauce Oatmeal Muffins

You will need: 1 cup old fashion rolled oats (not instant). 1 cup non fat milk. 1 cup whole wheat flour. 1/2 cup unsweetened applesauce. 2 eggs whites. 1 tsp. baking powder. 1/2 tsp. salt. 1 tsp. cinnamon. & 1 tsp. sugar.

Nutritional info: fat: .5g carbs: 20.5g calories: 93.5! protein: 2.9g

Soak the oats in milk for about one hour. Preheat the oven to 400 degrees. Spray muffin pans with cooking spray. Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl measure and whisk the dry ingredients together. Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan. Combine the cinnamon and sugar and top each muffin with some of the mixture. Bake for 20-25 minutes or until done. Remove from pan, cool and enjoy! These can be frozen and reheated in the microwave for a quick breakfast!
